Oolong teas are only partially oxidized. After the leaves are plucked, they are laid out for withering. This lets most of the water evaporate. Then the leaves are tossed in baskets in order to bruise the edges of the leaves. This bruising allows the leaves to beging to oxidize. The leaves are then steamed in order to stop any further oxidation. Oolong teas contain moderate levels of caffeine.
